I had this post all ready to go last week before I realized it was a theme week. Having an extra post in draft really came in handy this busy week.
First, let me apologize for the teeny tiny picture. I was just surprised to even find the picture online at all. Jim's specialty is breakfast. He's spoiled me for years with breakfast in bed on the weekends. This summer, he's been spoiling both his girls. Jim found this pancake mix sometime ago. He'd bring it to work and treat the other teachers with pancake breakfasts on occasion. When we saw how Sera loved pancakes, he stocked up. She eats her pancakes with butter or plain. She especially loves when he adds fresh blueberries to hers. This mix is great because you just add water, shake it up, and pour. Even better, the batter keeps. Some days he'll make just one pancake for Sera and save the rest of the batter for her breakfast the next day.
The day after this post, Jim decided to make pancakes for our breakfast. Sera's, of course, had blueberries. Mine was just wrong on so many levels, but boy did it taste good.
Jim's Snickers Pancake
1. Fast Shake Pancake Mix
2. Water
3. Snickers Dark Bar
Follow directions for mixing pancake mix. Chop one Snickers Dark bar. Pour first pancake and sprinkle top with candy bar. Cook as usual. Make second pancake using most of the remaining candy bar. Save a few bites for the cook to snack on while cooking. (Jim said he used about 4/5ths of the candy bar in two pancakes.)
Serve with butter and a sprinkling of powdered sugar.
Most of the candy bar actually melts into the pancake leaving chunks of nuts and caramel. It is the most sinfully good pancake, and should only be served for very special occasions.....or because it's Tuesday.
